Fall 09 Tasting Dinner Preview

Next weekend is my upcoming fall tasting menu. Here's what's on my mind:

Gathering: Potato chips, mochi & tequila

Course 1: Vinyl art - edible menu (Bee pollen, savory rice puffs, melon terrine, carbonated grapes, etc)
2: Sunchoke soup, sweet potato gnocchi, pumpkin paper with chipotle
3: Reconstructed avocado, prickly pear tequila sauce; hibiscus pork belly
4: Salmon tartare, chocolate aspic; mango and farmers market veg w/tomato caviar
5: Poached hamachi, melon, nori
6: Rabbit tagine, vin jaune
7: Cheese foam
8: Peach basil compote
9: Nine sweet bites

...just rambling thoughts at this point, but I have a lot of new toys to play with.

Sounds awesome Rob. I was almost to the point of being inspired by your seasonal dinners enough to test the waters of doing a monthly or bi-monthly supper club type thing here. Then I applied for and got that pastry job. Between that and the catering I don't know how much time will be left for other projects. Although, winter is on it's way so I won't be spending my free time biking. Anyway, looking forward to reading about this one.

and you know that the menu doesn't do it justice. I have no doubt that this will be the biggest and best yet.

So... how's it coming along? It's this weekend coming up right?

It is this weekend and I've just wrapped up a long run of caters which have kept me busy. I'm making tomorrow my day off so I'll get caught up with some blog posts including my new toys. I'm going to try and firm up the menu tonight so I can get started.
