I want to hear more about this 5 year old cheddar cheesecake. Sounds interesting. Awesome job on the dinner as a whole, inspirational and fun to follow along during the creation and execution.
I always use Craig Claiborne's base cheesecake recipe and then modify it to my needs. In this case, I also had some of andiesenjie's (from eG) homemade cream cheese and Old Quebec brand aged cheddar. I didn't remove any cream cheese, rather just added 15% grated cheddar to the mix. For the cider I roasted a couple of apples without additional seasoning, then juiced them and warmed right before serving. And thanks...I'm still hoping to get the last of the pics since they should be the best ones.
