This link has pictures from the recent Pastry World Championship. Look at how beautiful these creations are. I know for many of you it will seem like a pointless or odd dream, but for me, to be able to create something this perfect, this beautiful, this inspiring would be a highpoint in my life. Whenever you all say positive things about my work, I appreciate it, but I know that in comparison to these masters, I am but an infant. Some day it will come. That is my dream.
Did not each of these "Masters" start with the same dream, passion, and confidence and build on that? Why not you?
ReplyDeleteFor what it's worth I have more respect for what you do then what they display. You meld your imagination and artistry with practicality and discipline. I have always admired that talent, though I understand your passion to create without restraint or inhibition.

Oh, at first I thought you dreamed of making showpieces. I suppose that is part of the package of being a pastry chef. I can't muster up enough feeling for them knowing they taste like corn syrup and food coloring. The entermets, on the other hand...
ReplyDeleteAnyway, I think that dream is well within your reach. I really do. It'll probably require training outside NM (though with your resourcefulness you'll probably find a way to go at it on your own). But I know you can do it :)
The showpieces have never impressed me - although did you see the picture of the Chinese team's peacock?! But, the entrements...such perfection. I look at them and see their errors, their crooked lines, their broken edges, but they're still beautiful and perfect in their own way. They are design. They are the melding of vision and taste. My dream vacation, for the past three years that I've been doing pastry, has been to spend a week in Chicago at Vanille Patisserie. To me, no one in America is better.
