Take a large golfball sized chunk of dough, work it with your hands into a rectangle, then place it between two silpats and roll. Every now and then lift the top silpat to check for uniformity of thickness and roll some more. Once you have it as thin as you think you can get, lay a dish towel underneath the silpat and roll some more - this will get you super thin.
