Roast the squash with smoked paprika on it - btw, I did this because there were vegetarians and I needed to fill the gap made by the lack of meats. For the soup, rinse beans, soak overnight. Don't rinse, just add a bit more water. Bring to a boil and then down to a low simmer. Cook at least two hours - I went 4 because of altitude. With one hour left, in skillet sauté onion, carrot and a bit of dry basil with fresh ground black pepper (I used tellicherry). Cook til softend and add to the soup. Season with salt. At service add a drizzle of olive oil. I think a hint of orange zest would be nice but I didn't think of it at the time.Gfron1https://www.blogger.com/profile/09293609846439667977noreply@blogger.comtag:blogger.com,1999:blog-5398221400738351120.post-80041114073358359512010-01-07T19:55:32.537-08:002010-01-07T19:55:32.537-08:00You had me at the first one, but then BLACK-EYED P...You had me at the first one, but then BLACK-EYED PEAS!

We were away for the EVE, then had our peas for supper on Monday night. Still enough in the fridge to make a respectable Hoppin' John---I like the peas already cooked for that one.

Looks scrumptious---recipes? Especially the soup.RachelDhttps://www.blogger.com/profile/11204947567574886675noreply@blogger.com
